Savory Chicken and Mushroom Risotto

1 cup Arborio rice

1 lb boneless, skinless chicken thighs, diced

1 cup mushrooms (cremini or button), sliced

1 small onion, finely chopped

2 cloves garlic, minced

4 cups chicken broth (homemade or low-sodium)

1 cup white wine (optional, can use additional broth)

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

2 tablespoons unsalted butter

1 teaspoon dried thyme or a few sprigs of fresh thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prepare the Broth: In a saucepan, bring the chicken broth to a simmer over medium heat. Keep it warm as you prepare the risotto.

    Sauté the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Cook the Aromatics: In the same skillet, add another tablespoon of olive oil and two tablespoons of butter. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

        Add the Mushrooms: Add the sliced mushrooms to the skillet and cook until they release their moisture and reduce in size, about 5-6 minutes. Season with thyme, salt, and pepper. Stir to combine.

          Toast the Rice: Add the Arborio rice to the skillet, stirring to coat it with the oil and aromatics. Cook for about 1-2 minutes until the rice is slightly translucent around the edges.

            Deglaze with Wine: If using wine, pour it into the skillet. Stir constantly until the liquid is mostly absorbed by the rice.

              Add Broth Gradually: Begin adding the warm chicken broth, one ladleful at a time. Stir continuously and allow each addition to be absorbed before adding the next. Continue this process for about 18-20 minutes, or until the risotto is creamy and the rice is al dente.

                Combine Chicken and Cheese: Stir the cooked chicken back into the risotto along with the grated Parmesan cheese. Mix well and adjust seasoning with salt and pepper to taste.

                  Finish and Serve: Remove from heat and stir in the remaining tablespoon of butter for added creaminess. Let it rest for a couple of minutes. Dish out the risotto and garnish with fresh parsley.
