2 cups cooked chicken, shredded

1 cup long-grain white rice

3 cups chicken broth

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup cheddar cheese, shredded

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon soy sauce

1/2 cup sour cream

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it's translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: In a large mixing bowl, combine the cooked chicken, sautéed onion and garlic, cooked rice, chicken broth, frozen mixed vegetables, sour cream, soy sauce, paprika, thyme, salt, and pepper. Stir until well mixed.

        Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it out evenly, ensuring all ingredients are well-distributed.

          Add Cheese Topping: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
