2 boneless, skinless chicken breasts

1 cup broccoli florets

1 cup bell peppers (any color), sliced

1 medium zucchini, sliced

1 tablespoon olive oil

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon dried Italian herbs (or mixed dried herbs)

Salt and pepper, to taste

¼ cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven or Grill: If using an oven, preheat it to 400°F (200°C). If grilling, preheat your grill to medium heat.

    Prepare the Foil: Cut four sheets of aluminum foil, each about 12x12 inches in size.

      Season the Chicken: In a small bowl, mix together the olive oil, garlic powder, onion powder, paprika, dried Italian herbs, salt, and pepper. Rub this mixture all over the chicken breasts.

        Assemble the Packets: Place one chicken breast in the center of each foil sheet. Surround the chicken with equal portions of broccoli, bell peppers, and zucchini. Drizzle any remaining seasoning mixture on top of the veggies.

          Add Cheese (Optional): If you’re using Parmesan cheese, sprinkle about a tablespoon of cheese over the chicken and veggies in each packet.

            Seal the Packets: Fold up the edges of the foil to create a sealed packet, making sure no steam can escape.

              Cook: Place the foil packets on a baking sheet if using the oven or directly on the grill. Cook for about 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C) and the vegetables are tender.

                Serve: Carefully open the foil packets (watch out for steam) and transfer the contents to plates. Garnish with fresh parsley before serving.
