Ingredients

4 boneless, skinless chicken breasts

Salt and pepper, to taste

½ cup all-purpose flour (for dredging)

2 tablespoons olive oil

1 tablespoon unsalted butter

8 ounces cremini or button mushrooms, sliced

3 cloves garlic, minced

¾ cup dry Marsala wine

¾ cup chicken broth

1 tablespoon fresh parsley, chopped (for garnish)

1 teaspoon fresh thyme leaves (optional)

Lemon wedges, for serving (optional)

Instructions

Prepare the Chicken: Season the chicken breasts on both sides with salt and pepper. Dredge each piece in flour, shaking off any excess.

Sear the Chicken: In a large skillet over medium-high heat, add the olive oil and butter. Once hot, add the floured chicken breasts. Cook for about 5-7 minutes per side, until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

Cook the Mushrooms: In the same skillet, add the sliced mushrooms. Sauté for about 5 minutes or until they are browned and tender. Add the minced garlic and cook for an additional 1 minute until fragrant.

Deglaze the Pan: Pour in the dry Marsala wine, scraping the bottom of the skillet to lift any browned bits. Let it simmer for 2-3 minutes until the wine reduces slightly.

Add Broth and Return Chicken: Stir in the chicken broth and bring to a gentle simmer. Return the chicken to the skillet, spooning some of the sauce over the top. Let it simmer for another 5 minutes for the flavors to meld.

Finish and Serve: Taste the sauce and adjust seasoning with more salt, if desired. If you like, add fresh thyme for extra flavor. Plate the chicken, drizzling the rich mushroom sauce on top and garnishing with fresh parsley. Serve with lemon wedges on the side, if using.
