Savory Chicken & Rice Soup

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, diced

1 cup brown rice, rinsed

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

6 cups low-sodium chicken broth

2 cups fresh spinach, chopped

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are softened and the onions are translucent.

    Cook the Chicken: Add the diced chicken thighs to the pot and season with salt, pepper, thyme, and rosemary. Cook for an additional 5-6 minutes until the chicken is browned on all sides.

      Add Rice and Broth: Stir in the rinsed brown rice and add the chicken broth and bay leaf. Bring the mixture to a boil.

        Simmer the Soup: Once boiling, reduce heat to low, cover the pot, and simmer for 30-35 minutes, or until the rice is tender and has absorbed the flavors. Stir occasionally to prevent sticking.

          Add Spinach and Lemon Juice: After the rice is cooked, stir in the chopped spinach and sauté for another 5 minutes until wilted. Finally, add the juice of one lemon to brighten the flavors.

            Serve: Discard the bay leaf. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
