4 medium sweet potatoes

1 pound ground turkey

2 cups broccoli florets (fresh or frozen)

1 small onion, diced

2 cloves garlic, minced

1 teaspoon olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

½ cup shredded cheddar cheese (optional)

¼ cup Greek yogurt or sour cream (for serving)

Chopped green onions (for garnish)

Preheat the oven: Preheat your oven to 400°F (200°C). Pierce each sweet potato with a fork several times, then place them on a baking sheet. Bake for about 45-60 minutes, or until they are tender and easily pierced with a fork.

    Cook the turkey: In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, cooking until the onion is tender, about 3-4 minutes. Add ground turkey to the skillet, cooking until browned and cooked through, breaking it apart with a wooden spoon.

      Add broccoli: If using fresh broccoli, chop it finely and add it to the skillet with the turkey mixture. If using frozen broccoli, thaw it first, then add it to the pan. Cook for an additional 5-7 minutes, until the broccoli is tender. Stir in smoked paprika, dried thyme, salt, and pepper, mixing thoroughly.

        Assemble the stuffed potatoes: Once the sweet potatoes are cooked, remove them from the oven. Allow them to cool slightly, then slice them in half lengthwise. Use a fork to gently fluff the insides. Spoon the turkey and broccoli mixture generously into each sweet potato half.

          Top with cheese (optional): If desired, sprinkle shredded cheddar cheese on top of the stuffed sweet potatoes. Return them to the oven for an additional 5-10 minutes, just until the cheese is melted and bubbly.
