Smoky Pulled BBQ Chicken Sandwiches

2 pounds boneless, skinless chicken thighs

1 tablespoon olive oil

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup BBQ sauce (store-bought or homemade)

4 brioche buns

1 cup coleslaw (for topping)

Pickles (optional, for serving)

Instructions
 

Prepare the Chicken: In a large bowl, combine the smoked paprika, garlic powder, onion powder, ground cumin, cayenne pepper, salt, and pepper. Set aside.

    Season Chicken: Pat the chicken thighs dry with paper towels. Drizzle olive oil over the chicken, coating evenly. Sprinkle the spice mixture over the chicken, ensuring it is well-seasoned.

      Cook the Chicken: Place the seasoned chicken thighs in a slow cooker. Pour half of the BBQ sauce over the chicken, coating it evenly. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.

        Shred the Chicken: After cooking, remove the chicken thighs from the slow cooker and place them on a cutting board. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken back to the slow cooker and mix with the remaining BBQ sauce.

          Toast the Buns: While the chicken is cooked, preheat a skillet or griddle over medium heat. Lightly butter the brioche buns and toast them until golden brown on both sides.

            Assemble the Sandwiches: On the bottom half of each toasted bun, pile on a generous portion of the smoky pulled BBQ chicken. Top with a handful of coleslaw for crunch, and add pickles if desired. Finish by placing the top half of the bun on each sandwich.

              Serve: Serve the smoky pulled BBQ chicken sandwiches warm with additional BBQ sauce on the side for dipping or drizzling.
