Sweet Sticky Orange Chicken

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

2 large eggs, beaten

Vegetable oil, for frying

1/2 cup fresh orange juice (from about 2 oranges)

Zest of 1 orange

1/2 cup brown sugar

1/4 cup soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 teaspoon ginger, minced

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Breading: In a medium bowl, whisk together the flour, cornstarch, salt, pepper, garlic powder, and onion powder. Place the beaten eggs in another bowl.

    Coat the Chicken: Dip each piece of chicken into the egg mixture, allowing the excess to drip off, then coat thoroughly with the flour mixture. Set aside on a plate while you heat the oil.

      Fry the Chicken: In a large skillet or deep frying pan, pour enough vegetable oil to cover the bottom of the pan (about 1/2 inch deep). Heat the oil over medium-high heat until shimmering. Fry the chicken pieces in batches, being careful not to overcrowd the pan. Cook for 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

        Make the Sauce: In a saucepan over medium heat, combine the orange juice, orange zest, brown sugar, soy sauce, rice vinegar, sesame oil, and minced ginger. Bring to a boil, then reduce to a simmer. Stir occasionally until the sugar dissolves.

          Thicken the Sauce: Once the sauce is simmering, add the cornstarch-water mixture and stir continuously until the sauce thickens, about 1-2 minutes.

            Combine Chicken and Sauce: Add the fried chicken to the saucepan and toss well to coat each piece with the sticky orange sauce. Cook for an additional 2-3 minutes until well heated.

              Serve: Transfer the Sweet Sticky Orange Chicken to a serving plate. Garnish with sliced green onions and a sprinkle of sesame seeds. Serve hot over rice or with steamed vegetables.
