Ingredients

For the Zesty Beef:

1 lb ground beef (80/20 for optimal flavor)

1 small onion, finely chopped

2 cloves garlic, minced

2 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

1 tsp oregano

1/2 tsp cayenne pepper (adjust for heat)

Salt and pepper to taste

1/4 cup beef broth (or water)

Juice of 1 lime

For the Avocado Crema:

1 ripe avocado

1/2 cup sour cream (or Greek yogurt for a healthier option)

Juice of 1 lime

1 small jalapeño, seeds removed (optional for heat)

Salt to taste

Fresh cilantro, chopped (optional)

For Serving:

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheddar cheese

Additional lime wedges for garnish

Instructions

Prepare the Beef Filling:

    - In a large skillet, heat a drizzle of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

      - Add the minced garlic and cook for an additional minute until fragrant.

        - Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula as it cooks, about 5-7 minutes.

          - Once the beef is cooked through, drain excess fat if necessary. Stir in chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and pepper. Pour in the beef broth and lime juice, mixing well. Let simmer for 5 minutes to let the flavors meld.

            Make the Avocado Crema:

              - In a blender or food processor, combine the ripe avocado, sour cream (or Greek yogurt), lime juice, jalapeño (if using), and salt. Blend until smooth and creamy. Taste and adjust seasoning if necessary. If the mixture is too thick, add a splash of water to reach your desired consistency.

                Warm the Tortillas:

                  - In a dry skillet over medium heat, warm the tortillas for about 30 seconds on each side until flexible. Alternatively, wrap them in foil and warm them in the oven.

                    Assemble the Tacos:

                      - To assemble, take a warm tortilla and spoon in a portion of the zesty beef mixture. Top with shredded lettuce, diced tomatoes, and cheddar cheese. Drizzle generously with avocado crema. Add fresh cilantro if desired.

                        Garnish and Serve:

                          - Serve tacos immediately with lime wedges on the side for added zest.
