2 cups water or chicken broth

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup diced cucumber

1/2 cup red onion, finely chopped

1/2 cup corn (fresh, frozen, or canned)

1 avocado, sliced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1/4 cup feta cheese, crumbled (optional)

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and water (or chicken broth) and bring to a boil. Lower the heat, cover, and simmer for 15 minutes or until all the liquid is absorbed. Once cooked, fluff the quinoa with a fork and set aside to cool slightly.

    Marinate the Chicken: In a small bowl, mix olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Rub this mixture all over the chicken breasts. Let the chicken marinate for at least 15 minutes (or up to 2 hours in the fridge for more flavor).
